For best results use a set of three: two outside, to stabilize the rotor and remove the inherent spring back, and the third to realign the bent surface. Put wheel on truing stand and use a the truing stand's run-out gauge or if you do not have a truing stand, you can use your disc brake pads as a gauge to measure rotor trueness.
